- 1 tsp chopped fresh thyme
- 100 ml dark rum
- S&P
- 1/2 pk gluten free & eggless pasta spaghetti (optional)

- Do not refresh the pasta in cold water. Just use a little olive oil. This allows the sauce to coat the pasta better

- Cook spaghetti as required 1 min before the end drop in the baby corn. Drain & coat in a little olive oil.
- Drain soaked mushrooms & chop small. Keep liquid for mushroom stock.
- In a pan over medium heat add a little olive oil & cook the leeks for a few minutes then add the garlic & thyme. Cook for 1 minute.
- Add all the mushrooms & cook for a few minutes. Add the rum & flambé. Pour in stock & rapidly reduce by 2 thirds.
- Add the cream & simmer for a few minutes & add the rocket till it wilts. Season to taste. Mix in the Basil then the spaghetti. Coat in the sauce.
- Serve & top with the celery leaf
